I Was Recently Diagnosed With Gestational Diabetes

I was recently diagnosed with Gestational Diabetes. My doctor sent in a prescription to my pharmacy for a glucose meter and testing strips and I immediately started checking my sugar 4 times a day, EVERYDAY! Mind you, I am a BIG BABY when it comes to needles, especially when I have to do it myself.

Now, I studied Physical and Teacher Education at The College of Charleston (Go Cougs), teach health and PE classes and have been licensed and taught a number of fitness classes over the years. On paper, I know EXACTLY what to do to control weight, portion sizes and count carbs… BUT when it becomes your everyday life and your unborn baby depends on it, it can be a bit overwhelming. 

I read the packet my doctor sent me front to back and was determined to control my sugar with diet and exercise so I didn’t have to resort to using insulin. But, I love carbs! Let me say it one more time so you can get an understanding of my relationship with carbs… I. LOVE. CARBS!!! THE. END. 

Bread, potatoes, rice, pasta, desserts, if it’s a carb, I could eat it for every meal, every day, for the rest of my life!

I have been looking for low carb ideas online so I still feel like I can eat my favorite foods. I came across this blog, That Low Carb Life, that offers a variety of recipes that are low in carbs, including “chaffles,” basically, cheese waffles. 

Chaffles are made out of eggs and cheese and can be a substitute for bread. 

I’ll always try anything once! (Plus, I was given a mini waffle maker for Christmas by one of my students and hadn’t had the opportunity to use it yet.)

Last week, I made sure I had eggs, the right type of cheese, added in some coconut flour (optional – but it gives the chaffle a more bread-like consistency) and viola my chaffles were ready to eat!

They were surprisingly delicious! I have since used chaffles for toast, sandwiches and even pizza crust.
